- For the cheesecake
- 6 ozs Lychee (canned)
- 7 ozs Multi-grain cracker
- 7 Tbsps melted butter
- 18 ozs Double cream cheese (60-75% fat)
- 3 ozs Whipped cream
- 6 ozs sugar
- 3 eggs
- 1 packet Instant pudding (cheesecake flavor)
- 3 ozs white Chocolate shaving
- To garnish
- Lychee

Preparation steps
1.
For the cheesecake, drain the lychees, chop and pat dry.

Crumble the crackers finely. Mix with the melted butter. Line the bottom of a springform pan with parchment paper. Press the cracker crumbs into the pan and press firmly. Chill.

Preheat the oven to 180°C / 350°F.

Beat the cream cheese, cream, sugar, eggs and pudding mix until smooth. Fold in the chocolate and lychees. Spread the cream cheese mixture into the springform pan. Bake for about 45 minutes. If the cheesecake is browning too much, cover with aluminum foil. Cool in the refrigerator.
5.
Serve garnished with lychees and white chocolate chips.
