For the cupcakes
½ cup unsalted butter (softened)
½ cup superfine caster sugar
cup self-rising flour
2 large eggs (beaten)
½ tsp vanilla extract
To decorate
2 ½ cups powdered sugar
white Chocolate ball (and coloured candy puffs)

Preparation steps

Preheat the oven to 180°C (160 fan) | 350°F | gas 4.

In a large mixing bowl, whisk together the butter, sugar, flour, eggs, vanilla extract and a pinch of salt using an electric hand whisk for 2 minutes until smooth.
3.
Spoon the batter into 12 silicone cupcake cases. Bake for 15-20 minutes until golden and risen. Remove and allow to cool on a wire rack.
4.
Meanwhile, stir together the icing sugar with enough hot water to create a spreading consistency.
5.
Spread the icing on the cupcakes and decorate with the sugar decorations before the icing sets.
