40 grams Hazelnuts (peeled)
3 handfuls Radish leaf
60 milliliters olive oil
4 Tbsps freshly grated Parmesan
4 Tbsps Crème fraiche
salt
freshly ground peppers
1 tsp lemon juice
400 grams Linguine
5 Radish

Preparation steps

Toast the hazelnuts in a dry pan until fragrant. Remove from the pan and let cool.

Rinse, dry, and coarsely chop the radish leaves. Puree the radish leaves with the hazelnuts and a little olive oil. Gradually incorporate the remaining olive oil until a thick pesto has formed.  Mix in the parmesan cheese and creme fraiche. Season to taste with salt, pepper, and lemon juice.

Cook the linguine in boiling salted water until al dente. Rinse, trim, and quarter the radishes. Place the linguine on plates, and top with the pesto and quartered radishes. Sprinkle with freshly cracked black pepper, and serve immediately.
