- 300 grams chilled Lamb fillet
- 1 Beefsteak tomato (peeled, seeded and chopped)
- 2 Tbsps cold pressed Lemon infused olive oil
- 1 tsp Chile oil
- Sea salt
- ½ tsp Garam Masala
- 1 generous pinch ground ginger
- 1 sprig mint
- 1 generous pinch ground chili peppers
- 1 small onion
- 1 small garlic clove
- 2 Tbsps Yogurt (0.1% fat)
- 1 scallion (thinly sliced)
- Romaine lettuce (for serving)
- 200 grams Olives (black and green, for serving)
- 8 Lemon wedge (for serving)

Preparation steps

Peel and coarsely chop the garlic and onion. Rinse the mint, shake dry, coarsely chop and mix with the garlic, onions, garam masala, ginger and chile pepper. Cut the cold meat into cubes and place in a meat grinder fitted with the fine disk along with the onion mixture and the chopped tomatoes and grind together. Transfer to a bowl and mix in the lemon olive oil, the chile oil and yogurt, to taste.

To serve, scoop 8 equal portions, arrange on the in 8 parts and forms uniform cams. Arrange on the romaine, sprinkle with scallions and serve with olives and lemon wedges.
