- 800 grams lamb (such as shoulder)
- 800 grams small new Potato
- 2 onions
- 2 garlic cloves
- 1 dried Pepperoncini
- Sea salt
- freshly ground white peppers
- 3 Tbsps olive oil
- 200 milliliters dry white wine
- 500 milliliters lamb stock
- 4 sprigs thyme
- 1 Tbsp lemon juice

Preparation steps

Rinse the meat, pat dry. and cut into small cubes. Rinse and scrub the potatoes, halve if large. Peel the onions and dice. Peel and thinly slice the garlic. Finely chop the pepperoncini.

Heat the oil in a large skillet. Season the meat with salt and pepper and saute the meat, onion, chile and garlic until the meat is browned all over. Deglaze with the wine and a little stock. Add the potatoes, cover and simmer over medium-low heat until the meat is tender, about 1 1/2 hours , adding more stock as needed. Stir in the thyme after the dish has cooked 1 hour.

Stir in the lemon juice, season with salt and pepper and serve.
