250 grams Kohlrabi
100 grams Sweet potato
60 grams onions
1 generous pinch finely chopped chili peppers
20 grams butter
100 milliliters white wine
650 milliliters vegetable stock
200 milliliters Whipped cream
salt
peppers (freshly ground)
1 Tbsp finely chopped Chervil
1 Tbsp finely chopped Kohlrabi
black, pickled Truffle (15-20 grams)
Chervil (for garnish)
Truffle oil (for drizzling)

Preparation steps

Peel kohlrabi, sweet potatoes and onions and cut everything into small pieces. Melt the butter in a saucepan, add kohlrabi, sweet potatoes, onions and chile pepper and sauté briefly. Deglaze with the white wine and cook until reduced by half. Pour in stock and cream, bring to a boil, reduce heat, cover and simmer 15-20 minutes.

Puree with an immersion blender finely, season to taste and sprinkle with the herbs. Pour into pre-heated soup bowls. Slice truffle into thin slices and sprinkle along with the chervil leaves and kohlrabi greens over the soup. Distribute a few drops of truffle oil over each bowl and serve.
