- For the muffins
- ½ cup butter
- ⅓ cup caster sugar
- 2 Tbsps light brown sugar
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 tsp Baking powder
- 1 pinch salt
- ½ cup milk
- 1 cup Chocolate chip
- For the buttercream
- ¾ cup unsalted butter
- 3 cups powdered sugar
- ½ tsp vanilla extract
- blue Food coloring
- To decorate
- 1 ¼ cups Shredded coconut
- blue Food coloring
- 4 ozs white Marzipan
- 24 Chocolate chip

Preparation steps
1.
For the muffins: heat the oven to 190°C (170° fan) 375°F gas 5. Place 10 paper cases in a muffin tin.
2.
Beat the butter and both sugars in a mixing bowl until light and fluffy.
3.
Gradually beat in the eggs, beating until fully incorporated into the mixture.
4.
Sift in the dry ingredients and gently stir into the mixture. Stir in the milk and half the chocolate chips.
5.
Spoon the mixture into the paper cases and sprinkle with the remaining chocolate chips.
6.
Bake for about 25 minutes, until golden. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
7.
For the buttercream: beat the butter until creamy. Sift in the icing sugar and beat until smooth. Beat in the vanilla and food colouring.
8.
To decorate: put the coconut and a few drops of colouring into a bowl and stir well to disperse the colour evenly.
9.
Carefully slice off the top half of each muffin. Spread a little buttercream on the cut half of each muffin and replace the top halves.
10.
Spread the replaced halves generously with the buttercream and press the coconut into the buttercream.
11.
Roll the white marzipan into 24 pieces for the 'eyes' and place on top of the coconut coated buttercream. Attach the chocolate chips to the eyes with a dab of buttercream.
