- 1 slice Smoked bacon (bacon, diced)
- 1 red Bell pepper
- 2 Tbsps olive oil
- 1 onion (chopped)
- 1 garlic clove (chopped)
- 1 stalk Celery (chopped)
- salt
- peppers
- dried thyme
- Tabasco sauce
- 1 pinch Nutmeg
- ½ tsp Worcestershire sauce
- 2 Tbsps Tomato paste
- 300 milliliters fish stock
- 100 grams
- 1 Tbsp chopped parsley
- 12 King prawn (frozen, shelled)
- 4 crayfish
- 100 grams Tuna steak
- vegetable oil (for cooking)
- butter (for cooking)

Preparation steps

Peel peppers with a vegetable peeler. Cut in half, remove seeds and ribs and cut flesh into 1 cm (approximately 1/3-inch) wide strips. Cook bacon in a pan and brown slightly. Add onions, garlic and celery and fry until onions brown.

Add spices, tomato paste, Worcestershire sauce, pepper strips and stock, then bring to a boil. Add rice, cover and cook for 20 to 30 minutes, until rice is soft.
Meanwhile, cook crawfish in boiling salted water for about 8 minutes.

Cut tuna into bite size pieces. Season with salt and pepper. Heat butter in a pan and cook tuna for 1 minute on each side. Add prawns and cook until pink.
Add crawfish, tuna and prawns to stew. Serve hot in bowls, garnished with parsley.
