- 250 grams Pastry flour
- 60 grams butter
- 100 milliliters Iced water
- 1 kilogram clarified butter (for frying)
- 225 grams Apricot jam (May substitute another jam)
- powdered sugar (for dusting)
Preparation steps
1.
Knead the flour with the butter and ice water until a flaky dough forms. Wrap in plastic and chill for 1 hour.

Heat the clarified butter for frying at 175°C (approximately 350°F). Roll out half the dough thinly on a lightly floured surface. Place a teaspoon of jam on the dough at equal distances.
3.
Roll out the second half of the dough and lay over the dough. Cut out with a round cookie cutter with the jam in the center of each. Cook the donuts in the clarified butter until golden brown. Drain on paper towels and dust with powdered sugar. Serve as fresh as possible.
