- ½ cup butter
- ⅓ cup caster sugar
- 2 eggs (beaten)
- 1 ¼ cups self-rising flour (sifted)
- 1 tsp Baking powder
- ½ tsp salt
- 1 tsp Mixed spice
- 1 ½ cups Blueberries

Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2.
Beat together the butter and sugar until pale and fluffy then gradually add the beaten eggs, flour, baking powder, salt and mixed spice.
3.
Fold in the blueberries then pour the mixture into greased muffin tins.
4.
Bake in the oven for 15 - 20 minutes or until the muffins are risen and golden brown on top.
