1. Place the chicken breast-side up on a work surface. Place the butcher's twine under the tail of the chicken and cross overtop.

2. Pull the twine over the chicken legs. Turn the chicken over and cross the twine over the chicken back.
3.
3. Wrap the twine around the excess skin around the neck and tie securely. Trim the remaining twine.
