- 1 ½ cups Straw mushroom
- 2 cloves garlic cloves (chopped)
- 1 stalk Lemongrass
- 5 hot, green thai chili peppers
- 3 Kaffir lime leaves
- 2 slices fresh Galangal
- 1 ⅓ cups shrimp (cleaned and shelled)
- 1 Tbsp Fish sauce
- 1 Tbsp Lime juice
- cilantro (to garnish)

1 Small plate, 1 Cutting board, 1 Large knife, 1 Small bowl, 1 Teaspoon, 1 Whisk, 1 Serrated knife, 1 Tablespoon
Preparation steps
1.
Clean and slice the mushrooms.
2.
Cut the lemon grass stalk into about 1 in (3 cm) lengths.
3.
Wash the chilies and slice diagonally.
4.
Pour the chicken broth into a saucepan and bring to a boil, then reduce the heat. Add the garlic, lemon grass, mushrooms, chilies, lime leaves, galangal and 1 tablespoon of fish sauce and simmer for about 4 minutes. Add the shrimps and cook very gently for about 1 minute. Remove the lemon grass from the soup. Season to taste with fish sauce and lime juice and serve garnished with coriander leaves.
