Preparation steps

1.
Heat the oven to 180°C (170°C in a fan oven), 350°F, gas 4. Line the baking tin with baking parchment.

Heat the honey with the cream in a small pan until it melts. Leave to cool until lukewarm.
3.
Beat the butter and sugar until fluffy. Gradually beat in the eggs. Mix the flour with the almonds, ginger, mace and baking powder and beat into the butter mixture gradually, alternating with spoonfuls of the honey cream. Beat to form a smooth, fairly firm dough, adding a little water or flour if necessary.
4.
Spread the dough into the tin and smooth the top. Brush with cream and sprinkle with almonds. Bake for 60-70 minutes, testing with a wooden cocktail stick. Cover with aluminium foil if the almonds are getting too brown.
5.
Remove from the oven, dust with icing sugar and cut into pieces to serve.
