Hearty Lentil Stew
Rinse lentils in cold water and drain well.
Rinse, peel and dice potatoes. Rinse soup vegetables, trim, peel if necessary and cut into cubes. Heat butter in a saucepan and saute potatoes and diced vegetables briefly. Add lentils to saucepan and pour in broth. Cook covered for about 40 minutes. Cut sausage into slices, add sausage to saucepan and heat. Season with salt, pepper and vinegar. Rinse parsley, shake dry and coarsely chop the leaves. Serve the stew garnished with parsley.
