- 1 ½ kilograms Kale
- 1 onion
- 40 grams clarified butter
- 600 grams smoked Mettwurst (or cooked sausages)
- 300 grams smoked Pancetta
- ½ l Beef broth (canned)
- 800 grams potatoes
- salt
- peppers (ground)
- 2 tsps granulated Broth
- ½ tsp coarsely crushed allspice

Preparation steps

Break kale leaves from the stem, and tear leaves small. Rinse well and blanch in plenty of salted water. Rinse in cold water and drain well. Peel onion and dice. Heat butter in a large saucepan and sauté the onion. Pierce the sausage several times with a toothpick and add with the pancetta and kale to the onions.

Heat broth, pour over everything, cover and cook over low heat for 30 minutes. Remove sausage and cook cabbage for another 30 min. Peel the potatoes, rinse, cut in half, cover with salted water in a pot and cook for about 25 minutes.

Remove bacon and cut into serving pieces. Season kale before serving with salt, pepper, granulated broth and allspice, add the sausage again, let heat and serve with boiled potatoes.
