- 14 ozs Spaghetti
- 4 cups Tomatoes
- 1 clove garlic cloves
- olive oil
- 1 dash Red wine
- 1 Tbsp Sesame seeds
- salt
- freshly ground Black pepper
- 1 Eggplant
- 1 green Zucchini
- 1 yellow Zucchini
- 1 tsp dried thyme
- 2 Tbsps freshly grated Parmesan
- rosemary (to garnish)
Preparation steps

Cook the spaghetti according to the package instructions until al dente.

Drop the tomatoes into boiling water for a few seconds, refresh in cold water, then skin, quarter, deseed and chop.

Peel and finely chop the garlic. Heat 2 tablespoons oil and saute the garlic, then add a little red wine and the chopped tomatoes. Remove from the heat, add the sesame seeds and season to taste with salt and pepper.

Wash, trim and slice the eggplant and zucchini. Sprinkle with olive oil and thyme and season with salt and pepper. Put on a grill and grill for 1-2 minutes each side.

Drain the spaghetti, mix with the tomatoes and serve into warmed bowls. Add a slice of each vegetable and sprinkle with 1 tablespoon Parmesan. Serve garnished with rosemary. Sprinkle the rest of the vegetables with Parmesan and hand separately.
