- 1 Zucchini
- Bell pepper (1 yellow and red)
- 1 bunch scallions
- 250 grams button Mushroom
- 6 Tbsps olive oil
- salt
- freshly ground peppers
- 150 grams Lettuce
- 2 Tbsps Wine vinegar
- 1 Tbsp Caper
- 1 pinch sugar
- ¼ tsp Mustard
- 2 Tbsps parsley

Preparation steps
1.
Rinse and peel the vegetables. Cut the zucchini lengthwise into 0.5 cm thick slices (approximately 1/10 inch). Cut the peppers into strips. Chop the scallions and cut the mushrooms as needed.
2.
Mix the vegetables with 2 tablespoons of oil, salt and pepper on a baking sheet and distribute in an even layer. Broil about 15 minutes, stirring well twice. Alternatively, grill on aluminum foil on a wood grill.
3.
In the meantime, rinse the lettuce and spin dry.
4.
Mix the vinegar with salt, pepper, sugar, mustard and oil.
5.
Mix the salad with the vinaigrette and serve on a plate with the grilled vegetables.
