- 2 Zucchini
- 2 Eggplant
- 2 red Bell pepper
- sun-dried tomatoes (in oil)
- olive oil
- lemons (juiced)
- 4 fresh Basil
- Sea salt
- freshly ground pepper
Preparation steps

Rinse the zucchini and cut into slices. Rinse the eggplants and cut into thin slices. Rinse the peppers and pat dry. Bake the peppers at 250°C (approximately 500°F), until the skin blisters. Gently peel the peppers. Halve the peppers lengthwise, remove the seeds and cut into quarters. Drain the tomatoes and halve, if necessary.

Spread the vegetables on a grill pan. Grill over hot charcoal on both sides. Sprinkle with 1-2 tablespoons of olive oil and season with salt and pepper. Serve garnished with basil leaves and drizzled with lemon juice.
