- 1 Eggplant
- 1 Zucchini
- salt
- 1 Red Bell pepper
- 4 slices Toast
- 1 garlic clove
- 2 sprigs thyme
- 4 Tbsps olive oil
- peppers (freshly ground)
- 300 grams Mozzarella
- Basil (for garnish)
Preparation steps

Rinse and slice the eggplant and zucchini in half lengthwise. Sprinkle with the salt and let the vegetables sit to release water, about 10 minutes. Pat dry.

Rinse and slice the pepper into thick strips. Toast the bread slices on a grill. Peel and finely chop the garlic. Stir the garlic with the thyme and oil. Brush the eggplant, zucchini, and bell pepper with the garlic and herb mixture and season with salt and pepper. Place the vegetables on the grill to cook through, about 5-6 minutes.

Divide the grilled vegetables between the toast and arrange a piece of mozzarella on each. Serve garnished with basil.
