- 2 red Bell pepper
- 8 garlic cloves
- 4 large trout (ready to cook)
- salt
- freshly ground peppers
- 10 mixed Fresh herbs
- extra-virgin olive oil
- 6 Tbsps lemon juice (freshly squeezed)
Preparation steps

Rinse the bell peppers, cut in half, remove seeds and cut into large pieces. Crush the unpeeled garlic cloves with the heel of your hand. Clean the trout under cold running water and dry with paper towels. Season inside and out with salt and pepper, then cut crosswise into 4–5 pieces. Skewer the trout pieces, bell pepper pieces and garlic cloves, alternating ingredients and place skewers on a hot grill and cook on both sides for 5–10 minutes.

Place the skewers on a serving dish with the herbs, season with a little salt and pepper, and serve drizzled with 1 tablespoon good olive oil and fresh lemon juice.
