Preparation steps

1.

Knock the pork cutlets even thinner between two sheets. Wrap tightly around a skewer packed with pepper in between.

2.

Place the cutlet skewers with a little distance over the hot barbecue grill and roast slowly while rotating.

Rinse the green beans, and blanch in boiling salted water for 6 minutes. Drain the green beans and let cool.

3.

Meanwhile, rinse the romaine lettuce, and shake dry. Peel the onion and cut into strips. Squeeze the juice from lemon. Peel the avocado, halve, remove the pit, slice the pulp, and sprinkle with lemon juice.

Mix the remaining lemon juice with oil to form the vinaigrette, and season with pepper.

Place the lettuce with the avocado slices and green beans on plates. Cut the grilled cutlets with the electric knife, place over the salad, and drizzle with the vinaigrette. Season with pepper again and serve garnished with the onions.
