7 Tbsps unsalted butter
6 Tbsps powdered sugar
1 egg yolk
¾ cup all-purpose flour
¼ tsp salt
6 Tbsps Almond flour
2 tsps match Green tea
2 Tbsps Sesame seeds

Preparation steps

1.
Beat together the butter and icing sugar in a mixing bowl until light and fluffy.
2.
Add the egg yolk, and mix well. Stir in the flour, salt and almonds until blended.
3.
Add the matcha tea and stir until just combined with some streaks remaining.
4.
Turn out onto a sheet of cling film and form into a log, about 5cm|2" diameter. Wrap tightly in the cling film and freeze for 40 minutes, until firm.
5.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
6.
Unwrap the dough log and cut into 5mm|1/4" slices.
7.
Arrange on the baking trays and press sesame seeds into each slice.
8.
Bake for about 10 minutes, until the edges have begun to brown. Cool on the trays for a few minutes, then place on a wire rack to cool completely.
