½ bunch fresh mint
1 onion
200 grams Ground lamb
1 pinch Ground cinnamon
freshly ground peppers
salt
2 eggs
6 leaves Brick pastry (or filo dough)
1 egg yolk
olive oil

Preparation steps

1.

Pluck mint leaves, rinse, shake dry and mince. Peel and mince onion. Combine minced lamb, mint and onion. Season with cinnamon, pepper, salt. Knead in egg.

Cook mixture in a hot, non-stick skillet for 4 minutes. Remove and let cool. Cut dough into rectangles, about 10 x 13 cm (approximately 4 x 5 inches) and cover with a damp cloth. 

3.

Add approximately 1 tablespoon of lamb mixture to each piece of dough. Brush edges of dough with beaten egg yolk and roll up.

4.

Heat 3 tablespoons olive oil in a pan and cook rolls on all sides for 4-5 minutes, until golden brown. Remove and serve with a spicy sauce, as desired.
