½ cup unsweetened cocoa powder
3 Tbsps semi-sweet Chocolate chip

¼ cup boiling water
1 ½ cups granulated sugar
6 Tbsps vegan butter (melted)
2 tsps pure vanilla extract

Preparation steps

In a small bowl, combine flax meal and water. Let stand for 10 to 15 minutes.

Position the oven rack in the lowest position. Preheat oven to 350º F. Line a 8 x 8-inch baking dish with parchment paper, allowing excess paper to overlap the edges.

In a medium bowl, whisk the flour and baking soda together; set aside.

In a separate bowl, add the cocoa powder, chopped chocolate, and salt. Add the boiling water and stir with a rubber spatula until the chocolate is melted and the mixture is paste like. Add sugar, vegan butter, vanilla extract and flax meal. Mix using an electric mixer until smooth. Using a wooden spoon, slowly mix in the flour mixture; mix until well combined.

Spoon the brownie batter into the prepared baking dish, batter consistency will be thick. Smooth top with a rubber spatula. Bake for 35 minutes or until the brownies are cooked through. Cool in the pan on a wire rack for 1 hour.

Using the excess parchment paper, carefully lift the brownies out of the baking dish and place them on the wire rack to cool completely. Cut into 2-inch squares and serve.
