- 1 ⅓ cups Milk chocolate (30 % cocoa, roughly chopped)
- 1 ⅓ cups Dark chocolate (70 % cocoa, roughly chopped)
- ½ cup butter
- 2 tsps Crème fraiche
- 3 eggs
- 1 ¼ cups brown sugar
- ½ tsp salt
- 1 ¼ cups plain flour
- ¾ cup almonds (finely chopped)
- 1 Tbsp Baking powder
- 20 almonds (blanched)

Preparation steps
1.
Place 120 g milk chocolate and all the dark chocolate in a bowl with the butter and melt over a pan of hot water. Stir in the creme fraiche.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4. Line a deep baking tray with baking parchment.
3.
Beat the eggs with the sugar and salt until creamy and until the sugar has dissolved. Gradually stir in the cooled chocolate mixture. Mix the flour with the nuts and baking powder and stir into the mixture.

Spread the dough smoothly onto the baking tray and bake the brownies on the middle shelf for approx. 30-35 minutes. They should still be slightly soft in the middle, so when checking with a cocktail stick, a little dough may adhere to it. Let the brownies cool slightly and cut into pieces (approx. 5x6 cm).
5.
Melt the remaining chocolate in a bowl over a pan of hot water. Garnish the brownies with the melted chocolate and the blanched almonds.
