- 4 Hakes (approx. 150 g each)
- 1 cup Pearl barley
- vegetable stock
- ½ cup red Pesto
- 2 ripe Tomatoes (finely chopped)
- 2 slices stale Bread (crusts removed)
- salt
- peppers
- Chervil (to garnish)

Preparation steps
1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Place the pearl barley in a saucepan and cover with 3 cm | 1" of stock. Bring to a simmer and cook steadily for 35-40 minutes until tender to the bite. Drain well and mix with half of the pesto and the chopped tomatoes. Cover and keep warm to one side.
3.
Spoon the remaining pesto on top of the hake fillets and smooth to an even layer. Place in a baking tray.
4.
Whiz the bread in a food processor to make breadcrumbs, then press the breadcrumbs lightly on top of the pesto.
5.
Bake in the oven for 12 minutes or until the fish is just cooked through, flaking easily.
6.
Serve alongside the pearl barley with a garnish of herbs.
