- 2 ½ cups white Bread flour (plus extra for dusting)
- 1 ¾ cups all-purpose flour
- ¼ oz quick-rising active dry yeast
- 2 tsps Chia seeds
- ¼ cup Goji berry
- 2 Tbsps sugar
- 1 ⅓ cups Almond milk
- To glaze
- 1 Tbsp olive oil
- 1 Tbsp Almond milk

Preparation steps
1.
Mix together the flour, yeast, chia seeds, goji berries and sugar in a mixing bowl.
2.
Pour in the almond milk and stir well.
3.
Turn the mixture out on to a lightly floured surface and knead for 10 minutes until smooth and elastic.
4.
Put into an oiled bowl, cover the bowl with a tea towel and leave in a warm place for 1-2 hours until doubled in size.
5.
Punch down the dough and cut into 8 equal pieces. Shape each piece into a ball.

Place the dough balls on a baking tray lined with non-stick baking paper, leaving a 1-1/2" space between them. Cover with cling film and leave for 1 hour.
7.
Heat the oven to 200°C / 400°F.

Mix together the olive oil and almond milk and brush over the dough balls. Make grooves in the top of each ball with a knife.
9.
Bake for 13-15 minutes until golden and cooked through. Place on a wire rack to cool completely.
