- 200 grams Goat cheese
- 80 black, pitted Olives (chopped)
- 4 leaves Brick pastry
- 2 Tbsps olive oil
- 1 bunch thyme (chopped)
- salt
- freshly ground peppers
- olive oil (for frying)

Preparation steps
1.
For the filling, crumble the goat cheese in a bowl with a fork. Mix in the chopped olives, 2 tablespoons of olive oil and chopped thyme. Season with salt and pepper.
2.
Pour the filling over each diagonal half of brick dough sheet. Brush the edges with water, fold the sheet over the filling and squeeze well to form parcels.
3.
Fry the parcels in plenty of hot olive oil on both sides for about 6 minutes until golden brown. Drain the fried parcels on paper towels.
4.
Serve as desired with green salad.
