- 1 cup Almond flour (scant)
- ⅔ cup butter
- ⅔ cup caster sugar
- 2 eggs (beaten)
- ½ tsp Almond extract
- 1 ¼ cups gluten-free self-rising flour
- 1 cup Candied cherry (chopped)
- ¾ cup Chocolate chip
- To decorate
- powdered sugar
- 12 Cherries

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4 x 12cm|5" cake tins and line the bases with non-stick baking paper.
2.
Beat together the butter and sugar in a mixing bowl until pale and fluffy.
3.
Gradually whisk in the eggs and almond extract.
4.
Sift in the flour and stir in gently with the ground almonds, cherries and chocolate chips.
5.
Spread evenly into the tins and bake for 25-30 minutes until golden and springy to the touch. Cool in the tins for 10 minutes, then place on a wire rack to cool completely.
6.
Sift icing sugar over the tops and place 3 cherries in the centre of each cake.
