- For the meatloaf
- 16 ozs lean Ground beef
- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 1 Tbsp Red wine vinegar
- 1 Tbsp tomato puree
- 1 cup gluten-free breadcrumbs (more if needed)
- 1 tsp salt
- ¼ tsp freshly ground Black pepper
- for the pastry
- 18 ozs gluten-free puff pastry
- 1 egg (beaten)
- To garnish
- thyme
Preparation steps

For the meatloaf: heat the oven to 180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.

Mix together all the ingredients until well combined. Shape into a thick round.

Roll out the pastry, large enough to enclose the meat.

Place the meat on the pastry

Brush edges of the pastry with egg and wrap the pastry around the meatloaf to cover completely. Squeeze the ends together and seal well.
6.
Put onto the baking tray, brush with egg and bake for about 1 hour until the pastry is golden and the meatloaf is cooked.
7.
Garnish with thyme sprigs.
