- 14 ozs Rhubarb (cut into short lengths)
- 1 cup Gluten-free flour (heaped)
- ⅔ cup caster sugar
- ⅜ cup milk
- ¼ cup butter (melted)
- 1 tsp gluten-free Baking powder
- ¼ tsp salt
- ¼ tsp vanilla extract
- For the topping
- 1 cup sugar (scant)
- 1 Tbsp Corn starch
- 1 cup boiling water

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a deep baking dish.
2.
Place the rhubarb in the baking dish.
3.
Mix together the flour, sugar, milk, butter, baking powder, salt and vanilla until blended and thick. Spread over the rhubarb.
4.
For the topping: combine the sugar and cornflour and sprinkle over the sponge mixture. Pour the boiling water over the top. Do not stir.
5.
Bake for 55-65 minutes until golden and cooked through.
