500 grams liquid honey
300 grams sugar
3 eggs
15 grams Ammonium carbonate
1 tsp Ground cinnamon
1 tsp ground peppers
¼ tsp ground cloves
Nutmeg (per 1/4 tsp, crushed)
cilantro (per 1/4 tsp, crushed)
allspice (per 1/4 tsp, crushed)
Cardamom (per 1/4 tsp, crushed)
¼ tsp ground ginger
1 kilogram Pastry flour
100 grams powdered sugar
butter (for the baking tray)

Preparation steps

Grease 2 baking sheets with butter. Heat the honey over low heat. Whisk together the warmed honey, sugar, eggs, ammonium carbonate, salt and spices until smooth. Sift the flour into the mixture and stir until well combined. Quickly knead with hands to form a smooth dough.

Shape the dough into small balls about 2 cm (approximately 3/4 inch) in diameter and place onto the prepared cookie sheets. Bake in an oven preheated to 180°C (approximately 350°F) for 10-15 minutes, until golden brown. Remove from the oven and cool on a wire rack.

Heat the powdered sugar with a bit of water over medium heat until smooth. Spoon the glaze over the spice cookies and let dry.
