Glazed Banana Pudding
Split the vanilla pod and scrape the seeds into a heavy-based frying pan. Reserve the pod for garnish
Add the butter, sugar and ground cinnamon. Cook over a low heat until sugar has dissolved.
Add the peanuts and cook for a further 2–3 minutes. Add the bananas and continue cooking until they begin to soften and brown.
Add the rum, when the rum is hot tip the pan to ignite.
When the flames subside tip the bananas into a serving dish and garnish with the reserved vanilla pod and cinnamon stick. Serve warm with vanilla ice cream
