8 cups waxy potatoes
cup small gherkins (finely diced)
¼ cup Mayonnaise
¼ cup Yogurt
½ handful Chives (finely sliced into rings)
2 Tbsps white wine vinegar
1 small onion (finely diced)
5 cups Chanterelle
cup clarified butter

Preparation steps

1.
Boil the potatoes for around 25 minutes until cooked. Drain and leave to cool slightly.
2.
Mix 4-5 tbsp of gherkin pickling liquid with the mayonnaise and the yoghurt. Add the chives, reserving around 1 tbsp for later, and season the dressing to taste with vinegar, salt and ground black pepper.

Peel the potatoes and cut into slices or chunks. Add to the marinade together with the onion and gherkins and leave for around 20 minutes for the flavours to develop.
4.
Meanwhile, fry the chanterelles in hot clarified butter for around 5 minutes, seasoning with salt and ground black pepper. Leave the mushrooms to cool slightly then mix gently into the salad. Check the seasoning.
5.
Serve scattered with the remaining chives and top with a sprinkling of freshly ground black pepper.
