- 6 bone-in Pork loin (1 1/2 inches thick)
- 2 tsps butter
- 2 tsps olive oil
- 1 Tbsp fresh ginger (grated)
- ½ tsp ground cinnamon
- 1 cup dried Apricot
- 1 large Sweet potato (peeled and cubed)
- ½ tsp Nutmeg (grated)
- ¾ cup raisins
- ¼ tsp ground allspice
- 3 cups Orange juice
- 2 cups Cranberry sauce

Preparation steps

Preheat oven to 350 degrees F.

In a large heavy skillet, melt butter with olive oil over medium-high heat and brown chops 2 minutes on each side. Remove pork to a deep casserole dish with a lid; mix all other ingredients together with the pork, except the cranberry sauce. Cover and bake in the oven for 40 minutes, until pork is tender.
3.
Scoop the fruited pan juices over the chops and serve with cranberry sauce.
