1 ½ cups caster sugar
cup unsalted butter
1 pinch salt
½ cup Evaporated milk
1 tsp vanilla extract
2 cups chopped white chocolate

Preparation steps

1.
Put the sugar, butter, salt and milk into a large heavy based pan and heat gently until the sugar has dissolved completely.
2.
Increase the heat and bring to a boil, stirring all the time. Reduce the heat and simmer for 5 minutes.

Remove from the heat and stir in the vanilla and chocolate. Stir until the chocolate has melted and the mixture is smooth.
4.
Pour into a buttered tin and chill for a few hours until firm. Cut into small squares.
