4 Pear
2 Tbsps lemon juice
0.333 cup chopped Hazelnuts
1 ¾ ozs Dark chocolate (70% cocoa solids, chopped)
1 Tbsp butter
½ cup light brown sugar
cup sweet white wine
To decorate

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4.

Peel the pears and cut off the tops. Remove the inside with a corer and discard. Sprinkle with lemon juice.

Toast the hazelnuts in a dry frying pan and set aside to cool.

Mix the hazelnuts with the chocolate and spoon most of the mixture inside the pears.
5.
Place the pears in a baking dish. Replace the tops and dot with butter. Sprinkle with brown sugar and the remaining chocolate mixture.
6.
Pour the wine around the pears and bake for 20-30 minutes until tender. Decorate with caramel shapes.
