- 150 grams Pearl onion
- 500 grams Parsnips
- 2 organic lemons
- 1 ⅕ kilograms bone-in Roasted pork chop (trimmed, rind left on)

- 2 Tbsps clarified butter
- 2 Tbsps freshly chopped parsley
- 1 tsp thyme
- 500 milliliters Beef broth
- 3 Tbsps butter
- 3 Tbsps Apple jelly

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Peel the onions. Peel the parsnips, rinse and slice. Rinse the lemons in hot water, wipe dry and slice.

Rinse the meat, pat dry, truss with butcher's twine and season with salt and pepper. In a large roasting pan, melt the butter and sear the pork until golden brown on all sides. Add the parsnips, lemons, herbs and onions to the pan. Season with salt and pepper and sauté briefly. Pour in the broth then transfer to the oven to bake for about 1 hour 30 minutes, basting occasionally with the broth.

Melt the remaining butter and jelly in a small saucepan. Brush over the rind about 15 minutes before the end of the cooking time.
5.
Serve the roast with the vegetables.
