400 grams small waxy potatoes
2 sprigs fresh thyme
100 milliliters olive oil
50 grams Parmesan (grated)
8 Monkfish medallions (80 grams)

Preparation steps

Rinse, trim and slice the zucchini. Rinse the tomatoes and cut into slices, taking care to remove the stems. Rinse, peel and cut the potatoes into thin slices. Rinse the thyme, shake dry and strip the leaves. Grease the baking dish, layering in the vegetable slices.

Mix half the olive oil with salt, pepper and the thyme leaves and drizzle evenly over the casserole. Bake in a preheated oven at 180°C (approximately 350°F) and bake for about 25 minutes. Then sprinkle with cheese and cook au gratin for another 10 minutes.

Rinse the monkfish, pat dry with kitchen towels, sprinkle with lemon juice and season with salt and pepper. Heat the remaining olive oil in a pan. Cook the monkfish pieces on each side for about 3 minutes. Serve the monkfish with vegetable gratin on plates.
