- For the dressing
- ½ cup Raspberries
- ½ cup extra virgin olive oil
- 3 Tbsps Raspberry vinegar
- 1 shallot (finely chopped)
- 1 tsp honey
- salt
- peppers
- For the salad
- 2 cups vegetarian Camembert (thickly sliced)
- 3 cups mixed Baby greens arugula (rocket), spinach
- To garnish
- Pansy
- Mung bean sprouts

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.
2.
Heat the grill.
3.
For the dressing: put the raspberries, oil, vinegar, shallot and honey in a food processor or blender and blend until smooth. Season to taste with salt and pepper.
4.
For the salad: put the cheese slices on the baking tray and bake for 3-4 minutes until warmed through.
5.
Place under the broiler for 1-2 minutes until browned.
6.
Toss the salad leaves with the dressing and place on serving plates with the cheese.
7.
Garnish with pansies and scatter over the mung bean sprouts.
