- ½ tsp baking soda
- ¼ tsp salt
- ⅔ cup granulated sugar
- lemon zest (from 1 lemon)
- ¼ cup unsalted butter (softened)
- ½ tsp pure vanilla extract
- ¼ cup plain Greek yogurt
- 1 large egg
- ¼ cup milk
- 1 cup fresh Berry
- 1 ½ Tbsps Raw sugar
- mint (for garnish)
- powdered sugar (for garnish)

Preparation steps
1.
Preheat oven to 400° F / 200º C. Butter a 9-inch round cake pan and line the bottom with parchment paper. Flour the sides.

Whisk together the flour, baking powder, baking soda and salt in a medium bowl and set aside.

Place the granulated sugar and lemon zest in a large mixing bowl. Mix until well incorporated. Add the butter and beat on medium-high speed until pale and fluffy, about 3 minutes. Add in the vanilla, yogurt and egg; continuing mixing until all combined.

Beat in half the flour mixture until just combined. Then beat in the milk and remaining flour mixture.
5.
Spread batter evenly in the pan. Scatter berries over top and sprinkle evenly with raw sugar. Bake until cake is golden-brown and a tester inserted in the center comes out clean, about 25-30 minutes. Let cool before serving. Garnish with mint and dust with powdered sugar.
