- 18 ozs Puff pastry
- 2 Tbsps sugar-free blackberry jam
- 1 cup Almond flour
- ⅓ cup coconut sugar
- ⅓ cup butter
- 1 egg (beaten)
- To glaze
- 1 egg yolk (beaten)
- To decorate
- Fructose
- Raspberries

Preparation steps
1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Line a baking tray with non-stick baking paper.
2.
Divide the pastry in half. Roll each out into a round about 23cm|9" diameter.
3.
Place one round on the baking tray and spread with the jam.
4.
Beat together the almonds, sugar, butter and egg to a smooth paste.
5.
Spoon the mixture over the jam, spreading it evenly.
6.
Brush the edges of the pastry with water, then cover with the second piece, pressing the edges to seal.
7.
Mark the top of the pastry from the centre to the edges like the spokes of a wheel or in a zig zag pattern
8.
Brush with the egg yolk and bake for about 30 minutes until golden.
9.
Serve warm or cold decorated with raspberries and sift over a little fructose powder.
