12 cups baby Spinach
1 onion
1 clove garlic cloves
1 Tbsp Oil

1 ¼ cups Mozzarella
1 Tbsp chopped Basil
1 Tbsp chopped parsley
1 ⅛ cups low-fat Quark
Nutmeg
12 cannellini beans (approx. 300 g)
4 ½ cups chopped Tomatoes (tin)
4 Tbsps grated Parmesan
2 tsps fresh thyme

Preparation steps

Wash and sort the spinach, put into a pan dripping wet with a little boiling, salted water and cook until it wilts. Then drain, refresh in cold water, drain well, squeeze out and chop. Peel and dice the onion and garlic. Heat the oil and sweat the onion and garlic until soft. Add the spinach, season with salt, pepper and sweat over a medium heat for a few minutes, stirring. Leave to cool.

Heat the oven to 200°C.

Drain and finely dice the mozzarella. Mix the herbs, quark and mozzarella with the spinach and season with salt, pepper and nutmeg. Fill the cannelloni with the mixture. Put half of the chopped tomatoes into a greased baking dish and stir in 5 tbsp water. Lay the filled cannelloni on top and pour the rest of the tomatoes over them. Add 1 tsp thyme, season with salt and pepper and bake in the preheated oven (middle shelf) for 25 minutes. Then sprinkle with Parmesan and thyme and bake for a further 10-15 minutes.
