- 1 egg (beaten)
- 4 ½ cups all-purpose flour
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup Buttermilk
- For the filling
- ½ cup butter (softened)
- 1 cup powdered sugar
- 1 cup marshmallow cream (fluff)
- 1 Tbsp Blueberry Jam

Preparation steps

Heat the oven to 180°C/160°C fan/350°F/gas 4. Line two baking trays with baking parchment.

Put the butter and sugar into a bowl and beat together until pale and creamy. Beat in the egg. In another bowl sieve together the flour, bicarbonate of (baking) soda and salt. Gradually add spoonfuls of the flour and a little buttermilk, mixing well between each addition. Mix until thick and smooth but not too runny – you may not need all the buttermilk.

Using a small ice cream scoop, a piping bag or a spoon, drop eight rounds of the mixture onto each tray. Bake in the oven for 12–14 minutes until golden brown and firm to the touch. Cool for 5 minutes on the tray before transferring to a wire rack.

To make the filling put all the ingredients into a bowl and beat together until light and fluffy. Spoon the mixture into a piping bag fitted with a small star nozzle and pie the mixture onto eight of the sponges. Sandwich together with the remaining sponges to make whoopie pies.
