Ingredients

For the dough
2 Tbsps Yeast
2 tsps Dried yeast
¼ cup sugar
¾ cup lukewarm milk
3.333 cups flour
¼ cup soft butter
2 eggs
flour (for the work surface)
For the nut filling
2 cups ground Pistachio
¼ cup sugar
1 egg white
4 Tbsps milk
To decorate
0.333 cup slivered almonds
2 cups powdered sugar
3 Tbsps cream (at least 30% fat)

Preparation steps

1.
To make the dough mix the yeast with 1 tbsp sugar and 2 tbsp milk. Place the flour in a bowl and create a well in the middle. Pour the yeast mixture into the well, dust with some of the flour, cover and leave to rise for around 15 minutes.

Finally add the remaining milk, sugar, butter, eggs and a pinch of salt. Knead everything into a smooth dough. Cover and leave to rise in a warm place for about 30 minutes until it has doubled in size.

To make the nut filling mix together the pistachios, sugar, egg white and milk.

Re-knead the dough and then split into 3 equal pieces. Roll each piece out into a rectangle approx. 30 x 40 cm.

Spread a third of the filling on each piece leaving a 1.5 cm edge all the way round. Roll each piece up along the long side and seal the ends and the seam with water.
6.
Plait the three pieces together and leave to rise for a further 15 minutes. Place on a baking tray and brush with a little water. Bake at 190°C (170° fan), 375 F, gas 5 for around 50 minutes until golden brown. Remove from the tray and leave to cool.
7.
To decorate, roast the almonds until golden brown and leave to cool. Mix together the icing sugar and the cream and brush onto the bread. Sprinkle with the almonds and leave to dry.
