- For the biscuits
- ½ cup unsalted butter
- ½ cup caster sugar
- 1 egg (beaten)
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- To decorate
- 2 Tbsps Apricot Jam (jelly)
- ½ cup white Sugar paste
- ½ cup chocolate Sugar paste
- 3 tubes piping icing (lilac, orange, green)

Preparation steps
1.
For the biscuits: heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.
2.
Beat the butter and sugar in a mixing bowl until soft and creamy. Gradually beat in the egg and vanilla. Add the flour and mix to a dough.
3.
Roll out the dough on a lightly floured surface to a thickness of 1 cm|1/2". Using an oval-shaped card template or cookie cutter, cut biscuits out of the dough and place on the baking tray.
4.
Bake for 8-10 minutes, until pale golden brown. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.
5.
To decorate: brush the biscuits with the warmed jam.
6.
Roll out both sugarpastes on a surface lightly dusted with icing sugar and cut into ovals, the same size as the biscuits. Attach to the biscuits, smoothing lightly.
7.
Roll the sugarpaste trimmings into small balls, strips and whirls and attach to the biscuits with a dab of jam or a little water.
8.
Decorate the biscuits as desired, using the coloured piping icing tubes.
