- 4 large Fennel bulb
- 2 carrots
- 3 Tbsps olive oil
- 3 Tbsps Fruit Vinegar
- 150 grams Yogurt (0.1% fat)
- 2 Tbsps Ouzo
- salt
- freshly ground peppers
- 80 grams black Olives

Preparation steps

Rinse fennel, cut fennel leaves, chop some and set aside for decoration. Rinse fennel bulb, trim and cut into thin slices. Bring a pot with plenty of salted water to a boil, add fennel bulb slices, blanch and drain.

Rinse carrots, trim and finely grate. For the salad dressing, mix oil, vinegar, yogurt and ouzo in a bowl and season with salt and pepper. Arrange fennel on plates, cover with olives and grated carrots, drizzle with the salad dressing and serve garnished with fennel leaves.
