- 19 ozs Calf's liver (thinly sliced)
- ½ cup flour (for dredging)
- coarse salt (to season flour)
- freshly ground Black pepper (to season flour)
- paprika (to season flour)
- 2 Tbsps butter
- 2 Tbsps olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic cloves
- 6 Sage

Preparation steps

Rinse and trim the liver. Pry dry with paper towels.

Season the flour with salt, pepper, and paprika. Dredge the calves' liver in the seasoned flour, shaking off any excess flour. Set aside.

Heat the butter and oil in a large skillet over medium heat. Add the chopped onions and saute until golden brown. Add the garlic and saute until fragrant. Increase the heat to medium-high and add the liver. Cook, stirring continuously, for 2 to 3 minutes. Add sage leaves; turn liver over and cook for another 2 minutes, or until the liver is done.
4.
Season with salt and pepper, if necessary. Serve.
