- 3 Tbsps White vinegar
- 4 eggs
- 4 English muffin
- 100 grams baby Spinach
- 4 Portobello Mushroom
- 4 slices Bacon
- 2 Tbsps butter
- salt
- freshly ground peppers
- 1 Tbsp freshly chopped parsley
Preparation steps

Bring about 1 liter (approximately 4 cups) of water to a boil, add vinegar and remove from heat. Break eggs individually into a cup and gently slide into vinegar water. Poach for about 4-5 minutes (water should not boil!). Toast muffins and halve. Rinse and spin dry spinach, arrange spinach on muffin bottoms.

Clean mushrooms. Heat butter in a pan and saute mushrooms and bacon for about 2-3 minutes. Season lightly with salt and pepper. Lift eggs with a slotted spoon from the water, place on spinach and spread mushrooms and bacon on top. Garnish with a little parsley and replace muffin tops. Serve.
