- For Crepes
- 1 cup 2% milk
- ½ cup flour
- ½ cup Egg substitute (or 2 eggs)
- 2 Tbsps melted Margarine (or butter substitute)
- 1 Tbsp sugar
- salt
- For Apple Filling
- 6 mcintosh Apple (peeled)
- ½ cup sugar
- 2 Tbsps melted Margarine (or butter substitute)
- cinnamon
- fat-free french vanilla yogurt (optional)
- powdered sugar (optional)

Crepes can be stored in the refrigerator for up to 3 days or the freezer for up to a month.
Preparation steps

For Crepes:

Mix dry ingredients together. In separate bowl, whisk eggs, milk and melted margarine. Whisk into dry ingredients.

Heat crepe pan over medium heat. Use 1/3 cup batter per crepe. Cook for 2 minutes per side. Remove from pan and set on plate. Separate crepes with parchment or wax paper to prevent sticking.

For Apple Filling:

Heat large saucepan. Add apples and sugar. Sauté for 4 minutes or until sugar melts and apples turn a golden color. Pour margarine over apples. Sauté for 1 minute and remove from heat.

To serve, set crepe on plate. Place apple mixture in center of crepe. Top with 1 to 2 tablespoons yogurt and a sprinkle of cinnamon. Fold both sides of crepe to center.
7.
Dust with powdered sugar (optional).
